When it comes to breakfast I am a cold cereal and toast kind of mom. Hot breakfasts are usually reserved for weekends or when we have “breakfast for dinner”. This is because mornings are crazy and we are usually running late (we won’t go into my “snooze” button habits!) Today I am going to share a recipe for semi-homemade sweet rolls that would be perfect for weekdays (if you are more motivated than I am) or a weekend breakfast. Yum. These Caramel Apple Sweet Rolls are absolutely delicious and come together in under 30 minutes!
The base for this recipe are these Pepperidge Farm Pecan Caramel Sweet Rolls. It’s nice taking helps once and a while instead of doing it all from scratch!
Prepare your sweet rolls according to package directions. Each pack comes with 4 rolls, caramel sauce, and chopped pecans. Don’t care for nuts? Since they are packaged separately, just leave them out!
While the rolls bake, prepare your apple topping. When we lived in the midwest one of our favorite side dishes to order at a local restaurant were warm cinnamon apples. They are a delicious side dish and are so easy to make. Top the caramel sweet rolls with these warm cinnamon apples and they become Caramel Apple Sweet Rolls.
Caramel Apple Sweet Rolls
2 packages Pepperidge Farms Pecan Caramel Sweet Rolls
3 apples, diced
1 c. apple juice, seperated
1 1/2 tsp. sugar
1/2 tsp. cinnamon
2 tsp. cornstarch
Sprinkle cinnamon and sugar on apples and place in a skillet. Heat over medium heat and add 3/4 c. apple juice. Simmer 6-8 minutes or until fork tender. Whisk cornstarch and remaining 1/4 c. apple juice together and pour over apples. Reduce heat to low and stir until it begins to thicken. Remove from heat.
You can eat these as is for a side dish, or spoon onto pancakes or sweet rolls. So delicious!
When the sweet rolls come out of the oven, spoon warm cinnamon apples on top of each one and serve immediately.
