Light Italian Sandwich

Light and fresh, this Italian sandwich if full of flavor and only uses a few ingredients! The secret? A drizzle of your favorite Italian salad dressing. You’re welcome!

Aren’t sandwiches an incredible concept? You can put anything you’d like between two pieces of bread and create the perfect breakfast, lunch or dinner!We are in the process of selling our house and moving to the East coast. This means long days and late nights getting our house ready to list. Especially since we moved our listing date up 3 weeks! The night before the real estate photographer came to take pictures of our home I asked my husband what he’d like for dinner. We knew we had a long night ahead and couldn’t afford to stop and make a full on dinner. He said, “Do we have bread and lunch meat?” As a matter of fact, we did. And that’s what we had for dinner. Love that whole sandwich concept!

Today I’m sharing one of my favorites. You can add whatever you want to it, but the beauty of the Italian sandwich is that it is simple, with only a few ingredients. Some fun add-ins would be olives, red onions, and salami. I used what I had on hand: ham, tomatoes, and spinach, keeping it nice and light.

I love a good white bread. I especially like the Pepperidge Farm Farmhouse™ Hearty White.  Hearty, moist, delicious, and double wrapped for freshness. They also make Farmhouse Oatmeal bread.

I only add mayonnaise to one slice of the bread because I add a drizzle of Italian dressing on my sandwich at the end and that gives the other side of the bread moisture. Did you know that you can add  Hellmann’s® Real Mayonnaise to the outside of the bread and make a grilled sandwich? Yep, you totally can. I went for a quicker version and left my bread alone, but this makes a great grilled sandwich too!

I like the deli sliced lunch meats from Hillshire Farm®. This time I went with the Hillshire Farm® Ultra Thin Sliced Honey Ham. My husband likes to eat these lunch meats on their own or with a slice of cheese for a snack. They are slow roasted for hours which gives them a ton of flavor.

Spinach and sliced tomatoes add the salad element to my Italian sandwich.

And now for the dressing. Use your favorite one, it really doesn’t matter. I love the combination of oil/vinegar and herbs.

Cold or grilled, this is seriously one delicious lunch or dinner.

We will be on the road for a month this summer as we make our way from California to Virginia. We are making a ton of stops and are looking forward to packing up our travel trailer with sandwich fixins’ from Walmart to keep mealtime quick and easy!
