Roasted Tomato Shrimp Scampi
16 oz. box linguini
1 T. olive oil
5 cloves garlic, minced
1 carton cherry or grape tomatoes
salt and cracked pepper, to taste
2 (12 oz.) boxes SeaPak Shrimp Scampi
parmesan cheese, to taste
Cook pasta according to the package. While pasta is boiling, heat 1 T. oil in a small saute pan. Add minced garlic and cook for 1-2 minutes, or until fragrant. Drain pasta and toss with the sauteed garlic. Set aside.
Arrange tomatoes on a baking sheet and drizzle lightly with olive oil. Sprinkle with salt and pepper.
On another baking sheet, arrange shrimp.
Roast tomatoes on the middle rack. Check after 5 minutes and remove from oven when they begin to split.
Bake shrimp according to the package on top oven rack. Remove shrimp (leave the drippings) from baking sheet and set on a platter. Add the roasted tomatoes to the platter as well. Set aside.
Add a serving of pasta into a bowl. Add shrimp and roasted tomatoes. Sprinkle with freshly grated parmesan cheese and drizzle with a spoonful of garlic butter sauce.
