Chocolate Coconut Bites

These chocolate coconut bites easily rival your favorite coconut candy bars (Mounds and Almond Joy). Made with coconut dough dipped in dark (or milk) chocolate with or without nuts. They come together in about 15 minutes and are perfect for gift giving

Ingredients

  • 1 1/2 c. melting chocolate wafers milk or dark
  • 1 lb. coconut dough from Chocoley
  • whole almonds for nut option
  • chopped almonds for nut option

Instructions

  • Line a baking sheet with waxed paper.
  • Roll coconut dough into 1" - 1 1/2" balls and place onto waxed paper.
  • Melt chocolate in microwave safe dish for 30 seconds. Stir. Add 10 seconds if necessary and stir until smooth.
  • Dip coconut balls into chocolate, letting excess drain off and place back onto waxed paper.
  • Let harden.
  • For Almond Bites: place an almond in the center of the coconut ball and form dough around almond. Sprinke with chopped almonds after dipping in chocolate for a garnish.

Notes

You can use your favorite melting chocolate to create your chocolate coconut balls. I bounce back and forth between the Ghirardhelli melting chocoalte wafers that you can buy at Sam's Club during the holiday season and the Bada Bing Chocolates from Chocoley.
