Ingredients

  • 2 heaping cups bran flake cereal (Raisin Nut Bran, Raisin Bran, etc.)
  • 1 1/4 cup milk
  • 1 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/3 cup oil
  • 1 large egg

Instructions

  • Cover the bran flake cereal with milk and set aside. Let soak for 15-20 minutes.
  • Preheat oven to 400 degrees. Line a muffin pan with muffin liners or spray with nonstick cooking spray.
  • Combine flour, baking powder, salt, and brown sugar in a separate bowl.
  • Add vanilla, oil, egg, and honey to the cereal and milk mixture. Stir.
  • Add dry ingredients and mix thoroughly.
  • Divide batter among 12 muffin cups.
  • Bake muffins for 17-20 minutes (ovens vary). Tops should be lightly golden and the toothpick inserted should come out clean.

Notes

For moist and sticky muffins: Allow muffins to cool in the muffin pan until barely warm (NOT HOT) then transfer to a ziploc bag or airtight container. The condensation gives the muffins a soft and sticky texture.
