Raisin nut bran muffins are sweet, hearty, and delicious. Make a batch for a quick and easy breakfast all week long. Use any kind of bran flakes cereal you'd like!
Cover the bran flake cereal with milk and set aside. Let soak for 15-20 minutes.
Preheat oven to 400 degrees. Line a muffin pan with muffin liners or spray with nonstick cooking spray.
Combine flour, baking powder, salt, and brown sugar in a separate bowl.
Add vanilla, oil, egg, and honey to the cereal and milk mixture. Stir.
Add dry ingredients and mix thoroughly.
Divide batter among 12 muffin cups.
Bake muffins for 17-20 minutes (ovens vary). Tops should be lightly golden and the toothpick inserted should come out clean.

For moist and sticky muffins: Allow muffins to cool in the muffin pan until barely warm (NOT HOT) then transfer to a ziploc bag or airtight container. The condensation gives the muffins a soft and sticky texture.
