Ingredients

  • 2 c. heavy whipping cream
  • 1 can sweetened condensed milk
  • 6 drops red food coloring
  • 3/4 tsp. peppermint extract
  • 2/3 c. crushed peppermint candy

Instructions

  • Beat whipping cream with an electric mixer until stiff peaks form. Fold in condensed milk, peppermint extract, and food coloring.
  • Pour 1/3 of the ice cream mixture into a loaf pan. Sprinkle with 1/3 of the crushed candies. Add another layer of ice cream, then another layer of candy. Repeat once more.
  • Freeze 6-8 hours.

Notes

I like A LOT of peppermint candy crunch. If you think you’d like less, you can skip the middle layer of candy and just add one layer on the bottom and sprinkle a bit more on the very top.
You can stir the ice cream every hour or two to make it easier to scoop, but this is optional. Regardless, it will be tasty and if left to thaw for a few minutes will be scoopable.
