Instructions
Slice peppers and onions thinly. You can use any variety of bell peppers you'd like, but I like my fajitas colorful so I bought a variety pack with orange, green, yellow, and red.
Arrange on a large rimmed baking sheet.
Slice chicken into thin strips.
Arrange chicken on top of peppers and sprinkle 2-3 tablespoons of fajita seasoning over entire tray.
Drizzle olive oil over chicken, peppers, and onions, and use tongs to give everything a nice toss before baking.
Bake at 425 degrees for 30 minutes, stirring once mid way through the cooking process.
Serve with warm tortillas and sprinkle with fresh cilantro, lime juice (or lime wedges), and sides of avocado, cheese, and salsa. We like serving these with Spanish or Mexican rice.
