Pie Crust Cookie Recipe

There is usually a bit of pie dough leftover after assembling your pie. Don't toss it! Sprinkle with cinnamon and sugar and bake to make deliciously flaky little pie crust cookies!

Ingredients

  • 2 cups flour
  • 1 teaspoon salt
  • 2/3 cup shortening
  • 3 Tbsp. butter
  • 2 teaspoon vegetable oil
  • 1/3 cup buttermilk

Instructions

  • Mix flour and salt in a bowl. Cut in shortening using a pastry cutter. Cut in butter. Add oil and milk and stir until a soft dough forms.
  • Roll dough out to 1/4" thickness. Cut into 20 (4") cookie shapes using a small cookie cutter.
  • Spray with butter spray (or brush with butter).
  • Sprinkle with cinnamon and sugar.
  • Bake at 425 degrees for 6-7 minutes.

Notes

If you do not have buttermilk, substitute milk. Add 1 T. vinegar or lemon juice to the milk before pouring it into the bowl.
