Egg Salad BLT Sandwich

An egg salad BLT is a great way to use up those hard boiled eggs after Easter! Delicious egg salad, crispy bacon, sliced tomatoes and romaine lettuce piled onto grilled bread.

Ingredients

  • 8 eggs hard boiled
  • 1/2 cup mayonnaise
  • 1 Tbsp. sweet pickle relish
  • salt and pepper to taste
  • sliced tomatoes
  • lettuce
  • sliced bacon cooked
  • butter
  • sliced bread

Instructions

  • Chop eggs and mix with mayonnaise, relish, salt and pepper. Chill for 1 hour.
  • Spread bread with butter on one side. Brown bread in a skillet on med-high heat until golden.
  • Cook bacon.
  • Spread egg salad on sandwich. Add tomatoes, lettuce and bacon.

Notes

This egg salad recipe makes enough for 4 sandwiches. Recipe calories are for 1 sandwich (1/4 of the egg salad mixture, 2 slices thick cut bread, 2 slices bacon, lettuce and tomato).
