Honey Glazed Cornbread Muffins

These honey glazed cornbread muffins bake up quickly and are brushed with honey butter right after baking. Makes 12.

  • 1 1/4 cups cornmeal
  • 1 cup flour
  • 1/3 cup sugar
  • 1 Tbsp. baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup melted butter
  • 1 cup milk

Honey Glaze

  • 2 Tbsp butter
  • 2 Tbsp honey


  • Preheat oven to 400 degrees. Grease or line muffin pan with baking liners.
  • Whisk dry ingredients together.
    Mix in remaining ingredients with a spoon, just until batter comes together.
  • Fill muffin pan cups 3/4 full with batter.
  • Bake 15-17 minutes.
  • Melt butter and honey together in microwave for 30 seconds.
  • Brush honey butter over muffins as soon as they come out of the oven.



Serve with additional honey and butter.
