White Chicken Chili

Slow cooker white chicken chili is packed with flavor and simple ingredients like poblano peppers, jalapeno peppers, lime juice, white beans and chicken. Serve with shredded cheese and tortilla strips!

Ingredients

  • 1 onion chopped
  • 1 poblano pepper chopped
  • 1 jalapeno pepper chopped
  • 1 Tbsp. garlic minced
  • 1 Tbsp. cumin
  • 2 chicken breasts
  • 3 cans cannellini beans rinsed and drained
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1 Tbsp. lime juice

Toppings

  • cilantro
  • cheese
  • tortilla strips
  • extra lime wedges

Instructions

  • Combine onion, poblano pepper, jalapeno pepper, garlic, cumin, beans, chicken and broth in a slow cooker.
  • Cook on HIGH for 5 hours or low for 8 hours. Remove chicken and shred.
  • Add chicken back into slow cooker and stir in sour cream, salt and lime juice.
  • Serve with fresh chopped cilantro, shredded cheese, tortilla strips and extra lime wedges (optional).

Notes

This recipe serves 4-6 people (can easily be doubled) and makes the BEST leftovers. Serve over rice or chips to make it go farther.
