Pumpkin Bars With Cream Cheese Frosting

Soft pumpkin bars with cream cheese frosting are easy to make and so delicious! Moist, all the flavors of fall, and topped with a candy pumpkin. Easily double the recipe to make a large sheet pan of pumpkin bars!

Ingredients

Pumpkin Bars

  • 1/2 cup sugar
  • 1/2 cup butter softened
  • 1 egg
  • 3/4 cup pumpkin puree 1/2 can
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves

Cream Cheese Frosting

  • 6 oz. cream cheese softened
  • 1/4 cup melted butter
  • 2 cups powdered sugar
  • 2 Tbsp. milk
  • 1 teaspoons vanilla

Instructions

  • Mix sugar, butter and egg together.
  • Add pumpkin and vanilla.
  • Add in dry ingredients and mix thoroughly.
  • Spread batter in a greased 9×13 baking dish and bake at 350 degrees for 22-25 minutes, or until toothpick inserted comes out dry.
  • Mix frosting ingredients together and spread over cooled pumpkin bars.

Notes

You can easily make a double batch of bars and bake them in a sheet pan. Cooking time is similar. Check for doneness around 22 minutes with a toothpick.
