3 1/2cupswhite flour
2teaspoonbaking soda
1Tbsp.cinnamon
1teaspoonnutmeg
1/2teaspoonground ginger
1teaspoonsalt
2cupspureed pumpkin
2cupssugar
1/2cupoil
1/2cupapplesauce
4eggs
1teaspoonvanilla
1/2cupwater
1cupchopped walnuts
1cupmini chocolate chips
Instructions
Preheat oven to 350°F degrees.
Grease baking pans.
In a large bowl, mix pumpkin, oil, applesauce, sugar, eggs, vanilla and water. In a separate bowl combine baking soda, flours, cinnamon, nutmeg, and salt together in a large bowl. Add dry ingredients to pumpkin mixture and stir. Mix in walnuts and chocolate chips (optional).
Divide batter between prepared pans.
Bake muffins for 20-25 minutes or until toothpick comes out clean when inserted into the middle.
Bake mini loaves for 30-35 minutes.
Bake loaves for 55-60 minutes.
Cool in pans for 10 minutes before transferring to a cooling rack.
