The Best Pumpkin Bread Recipe

Looking for a versatile recipe for making the best pumpkin bread, muffins or mini loaves? This is it! Mini chocolate chips, pumpkin, walnuts, nutmeg, and a burst of cinnamon combine to bring together the flavors of fall. I'll share the cooking times for making all of the variations!

Ingredients

  • 3 1/2 cups white flour
  • 2 teaspoon baking soda
  • 1 Tbsp. cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon salt
  • 2 cups pureed pumpkin
  • 2 cups sugar
  • 1/2 cup oil
  • 1/2 cup applesauce
  • 4 eggs
  • 1 teaspoon vanilla
  • 1/2 cup water
  • 1 cup chopped walnuts
  • 1 cup mini chocolate chips

Instructions

  • Preheat oven to 350°F degrees.
  • Grease baking pans.
  • In a large bowl, mix pumpkin, oil, applesauce, sugar, eggs, vanilla and water. In a separate bowl combine  baking soda, flours, cinnamon, nutmeg, and salt together in a large bowl. Add dry ingredients to pumpkin mixture and stir. Mix in walnuts and chocolate chips (optional).
  • Divide batter between prepared pans.
  • Bake muffins for 20-25 minutes or until toothpick comes out clean when inserted into the middle.
  • Bake mini loaves for 30-35 minutes.
  • Bake loaves for 55-60 minutes.
  • Cool in pans for 10 minutes before transferring to a cooling rack.
