Place a popsicle stick into the bottom of each banana.
Place bananas on a wax paper or parchment paper lined baking sheet.
Freeze bananas for 30-60 minutes. Bananas can be dipped fresh or slightly cold, but I find that freezing them for AT LEAST 30 minutes makes for easier dipping and the bananas won't slide off of the sticks as easily.
Melt chocolate and coconut oil in a double boiler or in the microwave. If using the microwave, heat chocolate for 30 seconds and stir. Repeat heating in 15-20 second intervals until melted and smooth.
Dip bananas in chocolate or spoon chocolate over frozen bananas. Imediately sprinkle toppings over dipped bananas and place them back onto the baking sheet.
Return bananas to the freezer and freeze until chocolate is set.

I think these are best eaten on day 1 or day 2. Store leftover bananas in freezer bags in the freezer.
