Slow Cooker Cowboy Stew

A hearty cowboy stew that is sure to hit the spot. Ground beef, kielbasa, potatoes, corn, and beans simmered in the slow cooker. Serve with cornbread or biscuits!

Ingredients

  • 1 lb. ground beef or turkey
  • 1 onion diced
  • 1 12 oz. package keilbasa
  • 2 16 oz. cans chili beans in mild sauce
  • 2 teaspoons minced garlic
  • 1 4 oz. can green chiles
  • 1 1/2 cups frozen corn or 1 can of corn, drained
  • 14 ounces crushed tomatoes or diced (in juice)
  • 1 1/2 lbs. red potatoes 3-4 medium potatoes
  • 1 cup beef broth or water
  • 1 Tbsp. Worcestershire sauce
  • salt and pepper to taste

Instructions

  • Brown turkey in a skillet with diced onion. Cook until meat is done and onions are clear (if using ground beef drain off fat).
  • Cut potatoes into 1 inch pieces and kielbasa into small bite sized pieces.
  • Add meat to slow cooker. Add remaining ingredients, cover, and cook on HIGH for 5 hours or LOW for 8 hours (until potatoes are tender).
  • Allow stew to cool 20-30 minutes before serving.
