Hot Cocoa Brownie Bites
Hot cocoa brownie bites are chocolatey, rich, full of marshmallows, and delicious. Just like a cup of hot cocoa. You'll love these decadent brownie bites!

Ingredients
Brownies
- 1 18 oz. box brownie mix (+ eggs, water, and oil, according to package)
- 96 mini marshmallows (1 1/2 -2 cups)
Ganache
- 4 oz. chocolate chips (about 3/4 cup)
- 1 1/2 Tbsp. butter
- 1 1/2 teaspoons milk
- 1 1/2 teaspoons honey (or corn syrup)
- holiday sprinkles
Instructions
- Mix brownie mix according to the directions on the box.NOTE: if using my homemade brownie bites recipe it will make 36 bites so you will need 144 mini marshmallows and an extra half batch of ganache.
- Grease a mini muffin pan with nonstick cooking spray. Use a medium cookie scoop (2 Tbsp. size) to scoop batter into the muffin pan.
- Bake brownies at 350 degrees for 13-15 minutes.
- Immediately top each brownie bite with 4 mini marshmallows as soon as they come out of the oven.
- Place brownie bites BACK INTO THE OVEN and bake for another 2 minutes until marshmallows look slightly puffy. DO NOT OVERCOOK MARSHMALLOWS.
- Allow brownies to cool in the pan for 15-20 minutes then transfer to a wire cooling rack.NOTE: DO NOT try to remove the brownies from the pan while still hot. If you allow them to cool they are much easier to remove.
- Use a sharp knife around the edges of each brownie. This will make them easy to remove from the pan.
- Microwave glaze ingredients in a microwave safe bowl for 30 seconds. Stir. Heat an additional 15-20 seconds and stir until melted and smooth. Drizzle the ganache over brownies or add a small spoonful on the top of each one (about a teaspoon).
- Top with sprinkles, if desired.
