Easter M&M Cookies

You won't find a more festive cookie for spring than these Easter M&M cookies complete with M&M bunnies and white chocolate chips!

Ingredients

  • 1/2 cup butter melted
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup pastel M&Ms for the dough + more for decorating on top

Instructions

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • Melt butter and let cool for 5 minutes.
  • Sift flour, baking soda, baking powder, and salt into a bowl. Set aside.
  • Mix melted butter and sugars together in a separate bowl. Stir in the egg and vanilla.
  • Combine wet and dry ingredients and stir. Mix in white chocolate chips and pastel M&Ms.
  • Scoop using a medium cookie scoop onto ungreased or parchment paper-lined baking sheets.
  • Bake cookies for 10-12 minutes. While cookies bake, cut a handful of M&Ms in half using a sharp knife. These will be bunny ears.
  • Once the cookies come out of the oven press bunny ears into the hot cookie right next to any M&Ms that are sticking out of the cookie. If you don't see a lot of visible M&Ms go ahead and press some into the hot cookies then add the M&M halves for ears.
  • Let cookies cool on the pan for 5 minutes before transferring them to a wire cooling rack.

Store cookies in an airtight container for 3-5 days. Cookies can also be frozen.
