Mini Grasshopper Ice Cream Pies

Mini grasshopper ice cream pies with Oreos, mint ice cream, and whipped cream are the perfect size and are deliciously refreshing!

Ingredients

  • 16 Oreo cookies 12 whole cookies and 4 crushed cookies
  • mint chocolate chip ice cream a little over a pint
  • 2 cups whipped cream

Instructions

  • Line a muffin pan with cupcake liners.
  • Place a cookie at the bottom of each one.
  • Add a small scoop of ice cream on top of each cookie (about 3 Tbsp.)
  • Let the ice cream sit for 10 minutes then use a spoon to flatten the scoops and smooth the tops.
  • Add a small scoop of whipped cream (I used Cool Whip) and spread with a spoon.
  • Sprinkle crushed Oreo cookies over the ice cream cups.
  • Freeze mini ice cream pies for 3 hours.
  • Peel off the cupcake wrapper and serve!

Notes

These ice cream pies should be kept frozen except for serving. Store leftovers in an airtight container in the freezer.
