Mini grasshopper ice cream pies with Oreos, mint ice cream, and whipped cream are the perfect size and are deliciously refreshing!

Ingredients
16Oreo cookies12 whole cookies and 4 crushed cookies
mint chocolate chip ice creama little over a pint
2cupswhipped cream
Instructions
Line a muffin pan with cupcake liners.
Place a cookie at the bottom of each one.
Add a small scoop of ice cream on top of each cookie (about 3 Tbsp.)
Let the ice cream sit for 10 minutes then use a spoon to flatten the scoops and smooth the tops.
Add a small scoop of whipped cream (I used Cool Whip) and spread with a spoon.
Sprinkle crushed Oreo cookies over the ice cream cups.
Freeze mini ice cream pies for 3 hours.
Peel off the cupcake wrapper and serve!
