    Mini Grasshopper Ice Cream Pies (+ Video)

    Mini grasshopper ice cream pies with Oreos, mint ice cream, and whipped cream are the perfect size and are deliciously refreshing!

    Mini Grasshopper Ice Cream Pies

    My absolute favorite ice cream is mint chocolate chip. There's just something about the combination of mint and chocolate. It's sweet and refreshing. These mini grasshopper ice cream pies are easy to make and are so delicious. I especially love the Oreo crust---which is simply an oreo placed at the bottom of the cup!

    Grasshopper Desserts

    "Grasshopper" treats get their name from the green color. Grasshopper pies are usually made with a cream filling and flavored with creme de menthe. Our ice cream version is a delicious frozen variation. I used my favorite brand of mint chip ice cream (Turkey Hill), but you can use any kind you'd like. Cookies and mint ice cream would be perfect for these too!

    You can easily make a grasshopper ice cream pie in a 9-inch oreo crust like our peppermint ice cream pie, but I like the mini portion size that cupcake liners create. This recipe makes 12 mini pies and can be doubled or tripled to fit your needs. Our family loves these.

    Mini Grasshopper Ice Cream Pies Ingredients

    • 16 Oreo cookies (12 whole cookies and 4 crushed cookies)
    • Mint chocolate chip ice cream (a little over a pint)
    • 2 cups whipped cream

    How To Make Mini Ice Cream Pies

    Line a muffin pan with cupcake liners.

    Place a cookie at the bottom of each one.

    Add a small scoop of ice cream on top of each cookie (about 3 Tbsp.)

    Let the ice cream sit for 10 minutes then use a spoon to flatten the scoops of ice cream and smooth out the tops.

    Add a small scoop of whipped cream (I used Cool Whip) and spread with a spoon.

    Sprinkle crushed Oreo cookies over the ice cream cups.

    Freeze mini ice cream pies for 3 hours.

    Peel off the cupcake wrapper and serve! These ice cream pies should be kept frozen except for serving. Store leftovers in an airtight container in the freezer.
