No Bake Peanut Butter Blossoms

These no bake peanut butter blossoms start with a peanut butter Rice Krispies base, similar to scotcheroos, and are topped with a Hershey's kiss! A fun twist on a classic treat.

Ingredients

  • 1 cup light corn syrup
  • 1/2 cup white sugar
  • 1 cup creamy peanut butter
  • 5 cups Rice Krispies cereal
  • 34-36 Hershey's kiss candies unwrapped

Instructions

  • Line 2 baking sheets with parchment paper.
  • Heat syrup, peanut butter, and sugar over medium heat until smooth and the sugar has been dissolved. Remove from heat.
  • Pour peanut butter and syrup mixture over 5 c. of rice cereal. Stir until completely coated.
  • Scoop the mixture onto the baking sheet using a small cookie scoop (1 1/2 Tbsp.) or a spoon.
    Note: The mixture will be sticky at first, but if you let the cookie balls sit on the baking sheet for a few seconds they will quickly cool and you can easily shape them with your fingers.
  • Press a chocolate kiss into the center of each warm cookie.

This recipe makes 34-36 peanut butter blossoms. Store in an airtight container for up to a week.
