Ingredients
72crackers
1/4cuppeanut buttercreamy or crunchy
8ounceschocolate chips or melting chocolate wafers
Instructions
Place 36 crackers onto a baking sheet lined with wax paper or parchment paper.
Spread or squeeze a small amount of peanut butter onto each cracker.
Add a second cracker on top, creating 36 cracker sandwiches. Place the baking sheet into the freezer for 30 minutes. This will make the peanut butter crackers easier to dip into chocolate.
Melt chocolate in a double boiler or in the microwave. You can use melting chocolate wafers or chocolate chips. (I used 8 ounces of milk chocolate chips and a teaspoon of coconut oil then microwaved it for 60 seconds and stirred it until everything was melted and smooth).
Dip cracker sandwiches into chocolate using a chocolate dipping tool or fork. Tap the tool or fork against the side of the bowl to allow the excess chocolate to drip off before transferring the cracker back to the baking sheet.
Refrigerate the cracker bites until the chocolate has hardened.
