These Disney Wilderness Lodge Molasses Cookies are soft and chewy with rich molasses, ginger, cinnamon, and cloves. This is an official Disney recipe for the famous Molasses Crackle Cookies, and no chilling is required!
Preheat oven to 350°F. Line baking sheets with parchment paper.
Combine canola oil and 1 ¾ cups granulated sugar in a large mixing bowl. Mix until combined.
Add molasses and egg and mix until smooth.
In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
Gradually add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms.
Place the remaining ½ cup of granulated sugar in a small bowl.
Scoop cookie dough and roll into 2" balls (2 Tbsp. cookie scoop). Roll each ball in granulated sugar until completely coated. There is no need to chill the cookie dough.
Arrange cookie dough balls on prepared baking sheets, leaving about 2 inches between each cookie.
Bake for 10–12 minutes, until the cookies have spread and the tops are crackled.
Allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

No salt: There isn't any salt in the ingredient list, and that's not a typo! Disney's original recipe does not call for salt, so I make the cookies as written.No chilling: This is the version of Disney's Molasses Crackle Cookie recipe that uses 3 cups of all-purpose flour. The dough does not need to be refrigerated before baking.Molasses: Use regular unsulphured molasses for the best flavor. I don't recommend blackstrap molasses because it has a much stronger, more bitter flavor.Sugar: The recipe calls for ½ cup of sugar to roll the cookies in; I found that ¼ cup was plenty. You can reduce the sugar in the recipe to 2 cups total, if you prefer.Don't overbake: For soft and chewy molasses cookies, remove them from the oven once they've spread and developed their signature crackled tops. They will continue to set as they cool.Storage: Store completely cooled cookies in an airtight container at room temperature to help maintain their soft, chewy texture.
