Preheat oven to 350 degrees and line a baking sheet with mini graham cracker pie crusts.
Place 5-6 squares of chocolate into each cup (or 1 regular-sized peanut butter cup) in the center of each crust.
Top with mini marshmallows (about ¼ cup).
Bake for 6-8 minutes in the oven. If the marshmallows aren't as golden as you'd like, you can broil on HIGH for an additional minute or so.
Top with additional chocolate bar pieces (optional).

S'mores pies are best eaten the day that they are made, but can easily be reheated in the microwave for a few seconds (remove from foil liner). Store mini s'mores pies at room temperature, covered in plastic to keep fresh.
