Thick and chewy Rice Krispies treats, made even better by stirring in extra mini marshmallows! A classic treat that always goes fast at gatherings.

Years ago, I helped out with a bake sale with the teenage girls at church to raise money for summer camp. One of the girls' grandmothers donated two large trays of Rice Krispies treats, and they were one of the first items to sell out. They were literally the best Rice Krispies treats that I had ever had, and completely changed the way I made my own from that day forward.
What was the secret? Extra marshmallows mixed in at JUST the right time. Make a large batch of these for your next potluck, bake sale, or after-dinner treat! I like packaging them up and putting them in my kids' lunches. They'll go fast!
Why I Like This Recipe
- Thick and chewy. These are bigger than your typical Rice Krispies treat. They are thicker, and I cut mine nice and big. The unique way of adding extra marshmallows at the end makes them spongy and chewy.
- Microwave and stove top instructions. Rice Krispies treats are just about the easiest treat to make. I'll share both methods for making these classic treats.
- Feeds a crowd. My recipe is for a sheet pan of Rice Krispies treats. They fit in a 13x18 half sheet pan.

Tips and Tricks
- Extra marshmallows. An extra bag of mini marshmallows is added RIGHT before pressing the mixture into the baking pan. This allows the marshmallows to melt slightly due to the warm butter/marshmallow mixture, but they won't melt all the way.
- Sprinkles. I add sprinkles to the top before the Rice Krispies cool in the pan. They look so fun and festive, and it's an easy way to customize them for any occasion.
- Best way to package Rice Krispies treats. I slice mine into large squares and wrap them individually in plastic. This keeps them fresh for days!
Ingredients

- Butter: I bake exclusively with salted butter, but unsalted butter works as well. 8 Tablespoons.
- Marshmallows: You'll need 3 bags of mini marshmallows.
- Rice Krispies cereal: An entire 12-ounce box.

How To Make Rice Krispies Treats

Step 1: In a LARGE microwaveable bowl, add butter* and 2 packages of marshmallows. Reserve the 3rd package for later.

Step 2: Microwave in 45-second intervals, stirring in between with a wooden spoon or rubber spatula, until melted and gooey. Stir.
*If you watch my video, you'll notice that it calls for 6 tablespoon of butter instead of 8. Either way works, but after making these many times over the years, I prefer using 8 Tbsp.

Step 3: Place cereal in a large bowl or large pot. Pour melted marshmallow/butter over and stir until just combined.

Step 4: Add the last package of mini marshmallows. Stir.

Step 5: Pour mixture into a large prepared baking pan (lined with parchment or wax paper or sprayed with cooking spray. I use a 13×18″ half sheet pan.) Spray your hands with nonstick cooking spray or grease with a small amount of butter and pack down really well.

Step 6: Sprinkle with sprinkles and use your hands to pat down to make sure they stick. Let stand until room temperature or chill until firm.
Stove Top Instructions
Heat butter and marshmallows in a large pot on medium to low heat until melted and smooth. Stir in cereal and mini marshmallows using a wooden spoon. Prepare the rest the same as above.
Rice Krispies Treats FAQs
These could easily go for $2. They are large, individually packaged, and are a great value. The key is making them stand out; by cutting them into large portions and adding sprinkles, you are making them stand out.
You can make these a day before and wrap them individually in plastic to keep them fresh.
Along with adding extra marshmallows, make sure to not overmix the cereal and marshmallow mixture. Mixing too much can crush the cereal and flatten it, making it more dense vs. chewy.
Rice Krispies treats do not need to be refrigerated and are best when stored and served at room temperature.

How thick are these since using a cookie sheet pan? Looks yummy .
Also, have you ever tried browning the butter? If I brown the butter, should I add in more butter to replenish the butter that evaporated? I’m guessing yes.. ok, gonna try your recipe .
Brandy says
They are the thickness of the pan and then some, haha. It fill the pan to the top and a bit over, so just as thick as the ones made in a 9x13. This is basically a double batch of regular treats with an added bag of marshmallows. I haven’t made these with brown butter but I’d agree with your assumption to maybe use a little more.

Brandy- any suggestions on how to wrap these little gems for selling?
Brandy says
Hi Mary! When we sold these at a girls camp fundraiser we wrapped them in plastic wrap. It wasn't cutesy, but it worked well! I hope that helps!

Sorry, one more thing: About how many large squares did this recipe make altogether?
Brandy says
It made about 18 4"x3" treats. Just adjust to get more or less 🙂
Tasha says
Ah ok, that makes sense. Thank you for the quick response! 🙂 Looking forward to trying them tomorrow for a bake sale.
Tasha says
This looks real good but I'm confused about the amount of marshmallows. Is that three TEN ounce bags of marshmallows?
Brandy says
Hi Tasha! YES! 3 (10 oz. bags). It looks like my new recipe plug-in is getting confused a bit. Thanks for letting me know! I've updated it 🙂
