Creamy slow cooker pepperoncini chicken is ridiculously easy to make, full of flavor, and delicious served over rice or noodles or on a toasted bun. The perfect meal for busy families and makes great leftovers.

If you’re looking for a comforting and flavorful meal—this is it! You might mistakenly think that this is a spicy meal, but it’s not. It’s family-friendly and so delicious over white rice or noodles. You can even serve it in hoagies. I first used pepperonis in a meal like this when we made Mississippi pot roast. I loved the unique flavor they added to the dish and knew they’d be delicious mixed with chicken or even a pork tenderloin in other crockpot meals.
Our pepperoncini chicken differs from any Mississippi chicken recipe or Mississippi pot roast recipe because I do not use butter or packets of au jus gravy mix, and I use a lot less dry ranch seasoning. Ours is a creamy version that is perfect to ladle over rice.
What are Pepperoncini Peppers?
You might recognize these peppers from salad bars, pizza boxes, or from behind the glass at your local Subway sandwich shop. We love pepperoncini peppers and always keep a jar in our refrigerator. They are delicious on sub sandwiches and pizza! You’ll most often find pickled pepperoncini peppers, and that is what we’re using today for this dish. Grab a jar and reserve some of the juice for the sauce!
Pepperoncini peppers have a sweet and mild flavor. On their own, they have a bit of heat (hotter than a banana pepper, but much more mild than a hot pepper), but in a dish like this, where they are allowed to simmer all day, they are mild and add a sweet taste to the meal.
Creamy Pepperoncini Chicken Ingredients
boneless skinless chicken thighs: I prefer chicken thighs for this recipe, but you can also use boneless skinless chicken breasts or tenders. You’ll need 2 pound (about 8 thighs) for this recipe.
canned cream of chicken soup: I realize not everyone is a fan of canned cream soups. If this applies to you, feel free to make your own. Canned is easy so that’s what we’re using. You’ll need 2 cans.
pepperoncini peppers: You’ll want to grab a 16 ounce jar of sliced or thinly sliced peppers. You can find these next to pickles in the condiment aisle at the grocery store. You’ll use 1 cup of the peppers and 1/2 cup of the juice in this recipe.
dry ranch dressing mix: Buy a 1 ounce packet and use half in this recipe, saving the rest for next time.
How To Make Slow Cooker Pepperoncini Chicken
Place everything in the slow cooker, cover with the lid, and cook on HIGH for 4 hours or on LOW 6-8 hours.
Shred chicken with 2 forks and return to slow cooker.
Server over steamed rice, mashed potatoes, noodles, riced cauliflower, or on a hamburger bun (add a slice of your favorite cheese to the sandwich version. Melted provolone cheese is a good choice!).

Ingredients
- 8 boneless skinless chicken thighs (about 2 lbs.)
- 2 cans cream of chicken soup (10.5 ounce cans)
- 1 cup pepperoncini peppers (thinly sliced)
- 1/2 cup pepperoncini pepper juice (from the jar)
- 1/2 package dry ranch mix (1/2 ounce)
Instructions
- Place chicken thighs in the bottom of the slow cooker.
- Spread soup over the top of the chicken thighs.
- Add pepperoncini pepper slices and juice.
- Sprinkle with ranch seasoning mix.
- Cover and cook on HIGH for 4 hours or on LOW 6-8 hours.
- Shred chicken and return to slow cooker.
- Serve over steamed rice or cooked noodles.
