Blueberry Banana Muffins
These blueberry banana muffins are so moist and delicious! Sweet bananas, tangy blueberries and sprinkled with brown sugar for a crunchy muffin top. A great way to use up overripe bananas!

Ingredients

milk

cup
vegetable oil

egg

brown sugar

cup
mashed bananas
3-4 bananas

cups
flour

teaspoons
baking powder
½
teaspoon
salt

cup
blueberries
brown sugar for sprinkling
Instructions
Heat oven to 400 degrees. Line a muffin pan with muffin liners or spray with non stick cooking spray.
Combine milk, oil and egg in a large bowl. Stir in brown sugar and mashed bananas.
Add flour, baking powder and salt. Stir.
Fold in blueberries.
Divide batter evenly among muffin cups. Sprinkle tops of muffins with brown sugar (optional) beore baking.
Bake for 20-25 minutes.
Let muffins sit in pan for 5 minutes before removing. Run a butter knife along the edges to releast muffins.
