Blueberry Banana Muffins (Video)

These blueberry banana muffins are so moist and delicious! Sweet bananas, tangy blueberries and sprinkled with brown sugar for a crunchy muffin top. A great way to use up overripe bananas!  This post contains an affiliate link to my FAVORITE kitchen tool!

Banana muffins are delicious. Blueberry muffins are delicious, but have you tried blueberry banana muffins? We like making these when we have overripe bananas to use up. Blueberries are on of my kids’ favorite fruits to snack on and they are such a good price in the summer so we always have a container in the refrigerator for baking and snacking. It’s so easy to toss a handful into our pancake or muffin batter.

Blueberry Banana Muffins

This recipe makes 12 muffins. We like sprinkling the tops with brown sugar before baking for an added crunch, but that is totally optional!

Blueberry Banana Muffin Ingredients

  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup mashed bananas (3-4 bananas)
  • 2 cups flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • brown sugar for sprinkling

Combine ingredients and divide evenly in muffin pan. Sprinkle with brown sugar, if desired. Bake at 400 degrees for 20-25 minutes. You can use muffin liners in the muffin pan or spray the pan with non stick cooking spray.

Note: My favorite kitchen tool is my Danish dough whisk. It blends batters for cookies, muffins, pancakes and bread like a DREAM!

Ingredients

  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup brown sugar
  • 1 cup mashed bananas 3-4 bananas
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • brown sugar for sprinkling

Instructions

  • Heat oven to 400 degrees. Line a muffin pan with muffin liners or spray with non stick cooking spray.
  • Combine milk, oil and egg in a large bowl. Stir in brown sugar and mashed bananas.
  • Add flour, baking powder and salt. Stir.
  • Fold in blueberries.
  • Divide batter evenly among muffin cups. Sprinkle tops of muffins with brown sugar (optional) beore baking.
    Bake for 20-25 minutes.
  • Let muffins sit in pan for 5 minutes before removing. Run a butter knife along the edges to releast muffins.

CAN YOU FREEZE BLUEBERRY Banana MUFFINS?

Yes. Freeze in freezer bags and thaw before serving.

CAN YOU USE FROZEN BLUEBERRIES IN MUFFINS?

Yes! You can use fresh or frozen.

SHOULD YOU THAW FROZEN BLUEBERRIES BEFORE BAKING?

No need to thaw, gently fold the frozen blueberries directly into the muffin batter.
