Heat 3-4″ of oil in a deep fryer or heavy sauce pan to 350 degrees (the oil needs to stay between 350 and 375 degrees).
In a large bowl combine flour, baking powder, salt and cinnamon. Stir.
Add oil, milk and eggs to dry ingredients. Mix thoroughly.Fold in diced peaches.
Drop dough by spoonfuls into hot oil (about ¼ cup at a time).
Fry fritters for 3-4 minutes, turning occasionally to cook evenly.
Remover fritters from oil and drain on paper towels or a rack. Let fritters cool for a few minutes.
Combine powdered sugar and milk to make a glaze. Drizzle over warm fritters.

Tip: You’ll need to make these in batches unless you have a large enough pan. DURING YOUR FIRST BATCH: cut the first fritter open to check for doneness. If the batter is doughy, fry remaining fritters for another minute or two. I found that 3-4 minutes was good for my fritters, but it just depends on how big you make them and how closely you monitor the oil’s temperature. You’ll know exactly how long to cook your remaining batches for after your first batch.
