    3 fresh peach fritters

I'm such a sucker for anything pastry related. Donuts, hand pies, croissants, you name it. Fritters are such a simple treat. You can add so many things to them to make them sweet or savory.

    Fresh Peach Fritters

The batter that I use for fritters is an adaptation from a recipe found in my old Betty Crocker cooking book that my grandma gave me for Christmas over 25 years ago. I still use it all the time! It's a basic fritter batter that can be used to make any kind of fritter.  I added a cup of fresh diced peaches to mine, but you can use apples, bananas, corn, shrimp, crab---so many options.

    Ingredients

    • oil for frying

    Fritter Batter

    • 1 cup flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • ½ teaspoon cinnamon
    • 1 teaspoon oil
    • ½ cup milk
    • 2 eggs
    • 1 cup diced peaches

    Glaze

    • 1 cup powdered sugar
    • 3-4 Tbsp. milk

    How To Make Peach Fritters

Heat 3-4" of oil in a deep fryer or heavy sauce pan to 350 degrees (the oil needs to stay between 350 and 375 degrees).

In a large bowl combine flour, baking powder, salt and cinnamon. Stir.

Add oil, milk and eggs to dry ingredients. Mix thoroughly.

    Fold in diced peaches.

Drop dough by spoonfuls into hot oil (about ¼ cup at a time).

Fry fritters for 3-4 minutes, turning occasionally to cook evenly.

Tip: You'll need to make these in batches unless you have a large enough pan. DURING YOUR FIRST BATCH: cut the first fritter open to check for doneness. If the batter is doughy, fry remaining fritters for another minute or two. I found that 3-4 minutes was good for my fruit fritters, but it just depends on how big you make them and how closely you monitor the oil's temperature.

Remover fritters from oil and drain on paper towels or a rack. Let fritters cool for a few minutes.

Combine powdered sugar and milk to make a glaze. Drizzle over warm fritters.

This recipe makes about 9 fritters.
