The BEST Cosmic Brownie Cookies
Our cosmic brownie cookies are a fun nod to the Little Debbie classic and are made with a brownie mix! Chewy and DELICIOUS!

Ingredients
Brownie Cookies
- 1 fudge brownie mix
- ¼ cup flour
- ¼ cup melted butter (½ stick)
- 2 large eggs
- 1 cup mini semisweet chocolate chips (6 ounces)
Ganache
- 1 cup mini semisweet chocolate chips (6 ounces)
- 2 Tbsp. butter
- 1 Tbsp. honey or corn syrup
- 1 Tbsp. milk
Topping
- 3 Tbsp. cosmic sprinkles
Instructions
Cookie Dough
- Preheat oven to 375 degrees. Mix brownie mix and flour in a large mixing bowl.
- Add melted butter and eggs. Stir until completely combined.
- Stir in chocolate chips.
- Scoop cookies onto a parchment paper lined baking sheet (or lightly greased baking sheets).
- Bake for 10 minutes. Allow cookies to cool on baking sheet.
Ganache
- Combine ganache ingredients and melt on stovetop over med-low heat OR in the microwave in 15-20 second intervals, stirring in between each interval until melted and smooth.
- Spread ganache over cookies and add cosmic sprinkles.

Notes
Cookies can also be decorated with rainbow sprinkles or mini M&Ms.
Ganache glaze will set up after an hour (chilling in the fridge will speed up this process) allowing cookies to be stacked when stored.
Store cookies in an airtight container or covered in plastic.
