Our cosmic brownie cookies are a fun nod to the Little Debbie classic and are made with a brownie mix! Soft and chewy brownie cookies topped with ganache and cosmic rainbow chips. The perfect cookie for chocolate lovers! This post contains affiliate links.

Watch our step by step video!

If you love the fudgy, chewy Little Debbie cosmic brownie (or the Crumbl cosmic brownie cookies) you’ll love our cookie version. Made with a BROWNIE cookie as a base and coated with ganache. Delicious, smooth, and oh so easy to make.

Cosmic Brownie Cookies

Our cookies are actually made with a brownie mix! You are completely welcome to make the chocolate cookies from scratch (and if you do, be sure to use my chocolate cookie dough recipe), but a brownie mix makes for the perfect semi-homemade chocolate cookie dough base and flavor.

Just look at that texture! So fudgey and chewy. The chocolate glaze will set up allowing the cookies to be stacked and stored.

Cosmic Brownie Cookie Ingredients

Cosmic Rainbow Sprinkles

The fun sprinkles are what set these cookies apart. Cosmic sprinkles are basically mini chocolate chips with a candy coating. Kind of like M&Ms, but in a chocolate chip shape! You can sometimes find them in stock at Walmart or Hobby Lobby, or Wilton, but I ordered mine on Amazon. You only need a few tablespoons for this recipe so the bag that I have is kind of an overkill, but they won’t go to waste! I’ll add them to the top of Texas sheet cake or our Texas sheet cake cookies! You can also use mini M&Ms, which are always in stock.

Brownie Cookie Dough

  • fudge brownie mix
  • all purpose flour
  • melted butter
  • eggs
  • mini semi-sweet chocolate chips (you can also use regular-sized chocolate chips)

Chocolate Ganache

  • chocolate chips
  • butter
  • honey (or light corn syrup)
  • milk

How To Make The Best Cosmic Brownie Cookies

brownie cookie dough with mini chocolate chips

Preheat oven to 375 degrees.

Combine brownie mix and flour in a large mixing bowl.

Add melted butter and eggs and mix until smooth. You can mix using a stand mixer, but I like using my Danish dough hook.

Stir in chocolate chips.

Scoop cookie dough onto parchment-lined baking sheets using a medium cookie scoop (2 Tablespoon scoop) or roll into cookie dough balls. Bake cookies for 10 minutes.

Allow cookies to cool on baking sheets.

When cookies are cool make the ganache.

Combine ganache ingredients and melt on stovetop over med-low heat OR in the microwave in 15-20 second intervals, stirring in between each interval until melted and smooth.

Spoon ganache over cookies. Add cosmic sprinkles.

Ganache glaze will set up after an hour (chilling will speed up this process) allowing cookies to be stacked when stored.

Store cookies in an airtight container or covered in plastic.

If you’d like to make these from scratch vs. using a boxed mix check out our double chocolate cookie dough recipe! It’s simple and basic, flavored with cocoa powder and simple ingredients like brown sugar, granulated sugar, flour, salt, melted butter, baking soda, vanilla extract, and eggs. The perfect base to use for many crumbl cookie knock off recipes. Our recipe makes 30 cookies so you’ll need to make an extra half batch of glaze to cover all of the cookies.
