I may not come through when it comes to preparing hearty and hot breakfasts for my family, and we’re all about light and quick lunches, but dinner? Dinner is where I redeem myself. I enjoy making delicious and healthy dinners even on busiest of weekdays. That’s when I pull out all the kitchen hacks like slow cookers, pre-washed and chopped salads, and quick cooking meals like chicken breasts or pork tenderloins.
(She’s gotten better over the years. Only slightly.)
To keep cooking time at a minimum, I cut my veggies small and keep my tenderloin to about 1.5 lbs.
Pork Tenderloin Sheet Pan Dinner
2 lbs. red potatoes, cut into bite sized pieces
1 lb. brussels sprouts, quartered
olive oil, to taste
ground black pepper
Place tenderloin in the center of the pan.
Remove pan from the oven and let pork sit for 10 minutes before slicing.
