    I may not come through when it comes to preparing hearty and hot breakfasts for my family, and we're all about light and quick lunches, but dinner? Dinner is where I redeem myself. I enjoy making delicious and healthy dinners even on the busiest of weekdays. That's when I pull out all the kitchen hacks like slow cookers, pre-washed and chopped salads, and quick cooking meals like chicken breasts or pork tenderloins.

    Today I'm letting you in on a secret. See that photo of our sheet pan pork tenderloin dinner? That came together in under 45 minutes, start to finish! That even included the prep time! These pork tenderloins from the grocery store are already marinated and make dinner prep SO EASY. I picked out a cracked black pepper and roasted garlic one and it was delicious, but any of the marinated pork tenderloins would be fantastic.

    1 (1.5 lb. ) Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin

    2 lbs. red potatoes, cut into bite-sized pieces

    1 lb. brussels sprouts, quartered

    olive oil, to taste

    kosher salt

    ground black pepper

    Pre-heat oven to 425 degrees. Cut your vegetables into bite sized pieces. Toss with olive oil and salt and pepper.

    Arrange on a sheet pan, leaving an area in the center for the tenderloin.

    Place tenderloin in the center of the pan.

    Roast, uncovered until internal temperature reaches 145-160 degrees (about 35 minutes).

    Remove pan from the oven and let pork sit for 10 minutes before slicing.

      Oh, I am well aware of those dinner meltdowns...and there is nothing fun about them! But this dinner sounds delicious, and I bet no meltdowns would be involved. I'm a huge fan of roasted brussels, so I need to make this one soon. Thanks for sharing! #client
