Chocolate Peanut Butter Sandwiches

Looking for a quick treat to put together to fill that late night craving for chocolate? What? You don’t eat after 7pm? I wish I had that much will power. Well, for the rest of us, here is one of my favorite treats. And I made these at 7:30 tonight because I realized that I didn’t have any sort of dessert in the house. And it’s Saturday night. And I wanted some.
Ritz, peanut butter, and chocolate. It’s the perfect sweet and salty combo. Think of a Take 5 candy bar.

Spread peanut butter in between 2 Ritz crackers and dip in melting chocolate (Wilton candy melts or Ghirardhelli bars work well). Let set on wax paper in a cool place until the chocolate hardens. White chocolate is amazing as well.
Please make some of these so that I am not the only one stuffing my face after the kids go to bed.

    My Mother’s favorite thing to eat in this whole world was Ritz crackers and Jif peanut butter. She died this past July but ate these for years. I wonder what she would have thought of the dipped chocolate part. I would LOVE that.

      Hi Maureen! Thank you for your comment! I am so sorry to hear about your mother. My grandmother passed away in the fall and was like a mother to me, it certainly is a void in my life. You will have to try these (with chocolate) in her memory :)

    This sounds good and really easy. However, I don’t know how to melt chocolate LOL… My mama never taught me and I’m not sure what to do. If you can give me advice give me the easiest way possible, again LOL!!! My kids are grown and I don’t cook much anymore since it is only me. I have found it so hard to cook for one.

      Hi Kathy!

      I’m glad you asked! You can buy the Wilton’s Melting Chocolate by the bag at most craft stores. I will attach a link to what it looks like. Sam’s Club also sells Ghirardhelli bars of chocolate that you can melt down. You just put a handful lin a glass measuring cup or bowl and microwave it 30 seconds at a time, stirring in between, until it melts. Dip your Ritz sandwich in the chocolate and let it sit on wax paper until it sets up. The melting chocolates are nice because they harden quickly (especially if set in a cool place like the refrigerator). They harden much faster than if you melted chocolate chips. It would be hard to cook for one since every recipe out there makes enough for at least 4 people! At least with this one, you can scale it down to make as much or as little as you’d like :) Have a great week!

    Oh my gosh, I make almost this exact same thing as a late night snack, except I just spread the PB on the cracker and then sprinkle chocolate chips on top – I don’t even have the patience to melt chocolate when I get a craving for Ritz treats, haha!
