Red White & Blue Mini Fruit Pizzas

These red, white, and blue mini fruit pizzas are a fun and easy patriotic dessert using summer fruits. Assemble them ahead of time or let guests make their own!

The perfect summer dessert!  You could make a large one and cut it up, but these mini fruit pizzas are fun! I always buy too much fruit, especially at road side stands, and this is a great way to use it up before it gets too ripe. Mini fruit pizzas are so easy to whip up and are always a hit. Make a big batch and bring them to your next summer potluck or get-together!

When it comes to sugar cookies, I always make a batch of my bakery style sugar cookies, but you could use store bought refrigerated cookie dough too.  Bake and let cool completely.

As far as frosting recipes, there are two that I like to use for fruit pizza. If you are going to make these ahead of time, use the cream cheese based one. If you are going to serve them right away, or have guests make their own you can use the buttercream frosting. You can find both recipes at the end of the post.
When we lived in California I was asked to do a mini fruit pizza cookie bar a few times for the youth in our church. I always used my bakery style sugar cookies, and the kids loved making their own mini fruit pizzas. To keep it easy (12 dozen cookies) I used store-bought frosting and put it in bowls for kids to serve on their own. I also had bowls of fruit that they could add, in any variety they’d like.

Ruby and Kaylee helped me make a big batch to bring to our BBQ with cousins. They did such a great job, making each cookie unique. We stuck with blueberries and strawberries, but bananas are another great patriotic themed fruit.

These red, white, and blue mini fruit pizzas are a fun and easy patriotic dessert using summer fruits. Assemble them ahead of time or let guests make their own!

Prep Time: 20 minutes
Cook Time: 10 minutes

Ingredients

  • 1 cup butter softened
  • 1/2 cup shortening
  • 1 1/2 cup sugar
  • 1 egg
  • 1 1/2 teaspoon vanilla
  • 2 teaspoon almond extract
  • 4 cup flour
  • 1/2 cup corn starch
  • 2 teaspoon baking powder
  • frosting
  • strawberries and blueberries

Instructions

  • In a large mixing bowl combine butter, shortening and sugar. Beat until fluffy. Turn mixer down and add egg, vanilla and almond extract. Add baking powder. Sift in and flour and cornstarch until mixed thoroughly (1-2 minutes).
  • Lightly flour your working surface and shape dough into a large ball.
  • No refrigeration necessary.
  • Roll dough out to desired thickness (I usually do 1/4- 3/8″) and cut into shapes. Add flour to dough if it feels too sticky but a nice soft dough is what you want. Carefully transfer cut out cookie shapes with a spatula to a baking sheet.
  • Bake on baking sheets at 325 degrees for 10-12 minutes. Cookies will be soft. Let sit on baking sheet for 5 minutes before carefully moving to a cooling rack. Cool completely before frosting.
  • Frost cookies and add sliced fruit.

Notes

Tip: It's best to put uncooked cookies on cold baking sheets before baking to keep the dough firm. I like to roll out and cut all of my cookies and place them on baking sheets in the refrigerator while the other batches cook. This keeps the pans and dough chilled instead of waiting on the counter (at room temperature) to be cooked.

Yes, you can make the mini fruit pizzas a few hours in advance, but hold off on adding the fruits like bananas or others that will brown quickly until right before ready to serve.

What are the best frosting recipes to use for mini fruit pizzas?

Marshmallow Fluff and Cream Cheese Frosting:

6 oz. cream cheese, softened

1 1/2 c. marshmallow fluff

Beat the cream cheese and marshmallow fluff with an electric mixer until fluffy. Spread over cooled cookies.

Buttercream Sugar Cookie Frosting

1/2 c. butter, softened

3 c. powdered sugar

2 tsp. vanilla

3-4 T. milk

Beat or whisk ingredients until smooth. Spread over cooled cookies.

    Oh yum. We had fruit with the marshmallow dip last night for dinner. I love fruit pizza but for 3 it just gets wasted. With the option of making them individual I think it would work better for our menus.

I don’t decorate for Valentine’s Day (still re I don’t decorate for Valentine’s Day (still recovering from Christmas 😂), but I always have holiday candy on hand! This year I filled the jar with petite sour hearts after hearing how amazing they are from @triedandtruemoms. They were right, we are all fans over here! Maybe more places will stock them now that they are in such demand. I ordered mine from @candynationusa (don’t waste your time looking on Amazon. They are charging twice as much for less candy).

Today we made our favorite green smoothie. It’s all about balance—-just kidding. We all know that’s a lie. I have like 10 healthy recipes on my site and 800 breads and desserts. 😂

Tip: when buying produce, buy extra to freeze. I buy an extra pineapple, an extra package of grapes, an extra bunch of bananas and an extra bag of spinach and freeze them for smoothies. I slice everything up and freeze it on baking sheets then bag it up. It makes it easy to grab a handful to toss into a blender. You can freeze entire bags of spinach too and add a handful to smoothies. I always blend my spinach and water first then add the rest of the fruit. No little spinach chunks in the smoothie that way. 🙌🏻
