Quick Caramel Popcorn {Made in the Microwave!}

We have some pretty big popcorn fans in our home. As in, we eat popcorn EVERY. SINGLE. DAY. So when we recommend a recipe, you know it’s a tried and true one.  I absolutely love the caramel corn recipe that we use (It’s from Paula Deen!), but it takes an hour to bake in the oven. Well worth the time spent waiting, but this one is quick, easy, only takes 4 ingredients, and just as addicting!
It’s gooey too which is an added bonus. It’s as easy as microwaving butter, brown sugar and marshmallows and then pouring them over your popcorn. That’s it. My parents used to make marshmallow popcorn balls and they were one of our favorite treats growing up. This popcorn totally reminds me of those popcorn balls and now my kids can enjoy it too! I hope your family enjoys it as much as ours.

Quick Caramel Popcorn

1/2 c. brown sugar
1/2 c. butter
10 jumbo marshmallows
1/2 c. popcorn kernels

Pop popcorn in an air-popper or use two bags microwave popcorn and dump in a large bowl.
Microwave brown sugar and butter until melted, stirring frequently. Add marshmallows. Microwave until melted, stirring after every 30 seconds or so until melted.  Pour over popcorn and stir to coat evenly.

  1. Yum! I’ll have to try it! And, by the way, I LOVE Ruby’s bathing suit. I REALLY wanted it in London’s size. I love how much it covers and it’s adorable! I made her try on a 5T just to be sure it wouldn’t fit. Ha!

    • Thanks! I love it too. I bought it a size up, but it fits her perfectly and probably won’t fit her next year. It seems to run a bit small, but she will get a lot of use out of it this year :)

  2. Oh, and if you’re using the air popper (which I’m sure you guys have) how much do you usually pop for the recipe?

    • I used air popped popcorn and was able to spread one batch of marshmallow/butter/sugar sauce over everything. I did two batches (1/3 c. each). It would definitely be good on just one batch, but I was making it for 6 and knew the kids wouldn’t care as long as it was sweet!
