The Best Pumpkin Bread Batter
I love recipes that I can use for multiple things. This pumpkin bread recipe is just that. It makes delicious loaves, mini loaves and muffins. I made mini loaves this time because they are quicker than full size bread. My kids love bringing mini loaves and muffins in their lunch in lieu of sandwiches. This works great when I forget to buy bread and we’re scrambling to make lunches the night before. This batter yields the most flavorful and moist bread!
Pumpkin Mini Loaves, Muffins and Loaves Ingredients
- 3 1/2 cups all purpose flour
- 2 cups white sugar
- 2 teaspoons baking soda
- 1 Tbsp. ground cinnamon*
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 teaspoon salt
- 2 cups pumpkin puree
- 1/2 cup vegetable oil (or canola oil)
- 1/2 cup unsweetened applesauce
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 cup water
- 1 cup chopped walnuts or pecans
- 1 cup chocolate chips
Combine wet ingredients in a bowl. Whisk dry ingredients in a separate bowl. Mix wet and dry ingredients together. Fold in chocolate chips and nuts.
Divide batter amongst greased baking and loaf pans (loaf, muffin or mini loaf).
Mini chocolate chips and walnuts are optional, but I love the added flavor and crunch. For an all applesauce version (no oil) check our our healthier cinnamon pumpkin muffins. It’s a slight variation of this recipe and delicious too!
*(1 1/2 Tbsp. pumpkin pie spice can be used in place of cinnamon, nutmeg and ginger.)
Oven Baking Times
Bake muffins 20-25 minutes.
Bake mini loaves 30-35 minutes.
Bake loaves 55-60 minutes. If bread starts to brown too quickly you can tent it with aluminum foil for the last 20 minutes or so.
Bake at 350 degrees F until toothpick comes out clean when inserted into the middle. Mini loaves and muffins can be served hot, but pumpkin bread loaves slice easier after cooling on wire rack for an hour.

Ingredients
- 3 1/2 cups white flour

- 1 teaspoon salt
- 2 cups pureed pumpkin
- 2 cups sugar
- 1/2 cup oil
- 1/2 cup applesauce
- 4 eggs
- 1 teaspoon vanilla
- 1/2 cup water
- 1 cup chopped walnuts
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350°F degrees.
- Grease baking pans.
- In a large bowl, mix pumpkin, oil, applesauce, sugar, eggs, vanilla and water. In a separate bowl combine baking soda, flours, cinnamon, nutmeg, and salt together in a large bowl. Add dry ingredients to pumpkin mixture and stir. Mix in walnuts and chocolate chips (optional).
- Divide batter between prepared pans.
- Bake muffins for 20-25 minutes or until toothpick comes out clean when inserted into the middle.
- Bake mini loaves for 30-35 minutes.
- Bake loaves for 55-60 minutes.
- Cool in pans for 10 minutes before transferring to a cooling rack.
Nutrition
The muffins, mini loaves and quick bread can be store in an airtight container (or covered in plastic wrap) and also freezes well.
Basic Pumpkin Spice Mix
A simple combination of spices to mix up and keep on hand for fall baking.
(double or triple to make as much as you need)
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
