The cookie jar was empty so it was time to get baking. This week I made a batch of JUMBO MONSTER cookies! Have you had a monster cookie before? They are a mash-up of the best cookie ingredients all in one, and they don't have any flour in them, just oats. Simple. My uncle actually shared the recipe with me years ago. We were visiting and he asked me to make him a batch----knowing how much I love to bake. I was happy to oblige!

    What are monster cookies?

I actually looked it up a while ago and they are called monster cookies because they are the Frankenstein of the cookie world. M&Ms, oatmeal, peanut butter, and chocolate chips---all meld into one delicious jumbo monster cookie. And making them big just makes sense, after all, they are have the word "monster" in them.

I make mine with a ⅓ measuring cup as a scoop, but you don't have to make them that big. The recipe below will make 18 jumbo cookies or 2 ½ dozen regular sized (cookie scoop) cookies.

    Ingredients

    • 3 eggs
    • 1 ½ cup packed brown sugar
    • 1 cup white sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon corn syrup
    • 2 teaspoon baking soda
    • ½ cup butter
    • 1 ½ cup peanut butter
    • 4 ½ cup rolled oats
    • 1 cup semisweet chocolate chips
    • 1 cup candy-coated milk chocolate
    • pieces

    Instructions

    • Preheat oven to 350 degrees F (175 degrees C).
    • In a very large bowl, beat the eggs.
    • Add the remaining ingredients in order, mixing well. Dough will be wet and sticky.
    • Use a ⅓ measuring cup or ice cream scoop to put on ungreased cookie sheet. Bake for 15 minutes.
    • Let cookies stand on baking sheet for 3-5 minutes before transferring to wire cooling rack.

    Notes

I always let the cookies rest on the baking sheet a few minutes before transferring to a wire rack to cool. Otherwise they may fall apart while hot.
