    OREO COOKIE STACKS

So what is an Oreo cookie stack? I’ll tell ya! Each stack is made from 2-3 cookies, individually covered in chocolate and then stacked. As the chocolate hardens they become one glorious treat. Cupcake liners make great packaging for these treats and catch crumbs as you eat them.

Here is our St. Patrick's Day version made with MINT Oreos for a fun green surprise. They are chocolatey, minty, crunchy and delicious.

    Pot of Gold Oreo Ingredients

    • Melting chocolate (I used almond bark)
    • Oreos (any variety)
    • Gold sprinkles (these are the ones that I used)

You can cover them with melted chocolate chips, melting wafers, or chocolate almond bark. You'll just need 12 ounces of whatever you choose. You'll also need some sort of small gold candy or sprinkles.

How To Make Pot of Gold Oreo Stacks

mint oreos next to a platter of pot of gold oreos

Melt chocolate in a microwave-safe bowl for 1 minute. Stir until melted and smooth.

Dip Oreos into chocolate using a fork. Tap the fork against the side of the bowl to remove excess then place the chocolate-dipped cookie on a parchment paper-lined baking sheet.

Tip: along with tapping the fork against the side of the bowl, slide the bottom of the fork across the edge of the bowl right before transferring the cookie to parchment paper. This removes even more excess chocolate and prevents it from pooling on the paper.

Repeat with a second cookie then stack the cookie on top of the first cookie.

Add gold sprinkles and let cookies set up.

You can stack two or three cookies, but I find that two cookies are easier to bite into and is the perfect size for these little pots of gold. To see what a 3-stack looks like check out our original Oreo stacks.

This recipe makes 12 pots of gold.
