Our church has been making a sheet pan version of this dinner for years and delivering it to a local shelter during the holidays. The shelter serves it to anyone needing a hot meal. When I first saw the ingredients and directions I was skeptical at how simple it was, but decided to buy extra ingredients and make it for our family for dinner that night too. It was a hit! It is simple, but filling and delicious.
It was super easy to adapt the recipe for a slow cooker. I can prep this in under 10 minutes in the morning or early afternoon and it’s hot and ready at dinner time! Scroll to the end for the sheet pan instructions.
Slow Cooker Italian Chicken and Potatoes
Ingredients
- 3 chicken breasts, cut into thirds
- 2 cans green beans, drained
- 6 medium potatoes cut into bite sized pieces
- 1 stick of butter (1/2 cup), melted
- 2 packages of dry Italian dressing mix
- 1/4 cup water
Directions
- Place potatoes in the bottom of a slow cooker. Sprinkle with 1 package of dry Italian dressing mix.
- Add chicken pieces and green beans. Sprinkle with another package of Italian dressing mix. Drizzle with melted butter and add 1/4 cup of water.
- Cover and cook on LOW 6-8 hours or HIGH for 4-5 hours.
Potatoes should be tender.
Sheet pan version: Preheat oven to 375 degrees. Line a baking sheet with green beans and chopped red potatoes (bite sized pieces). Place chicken breast pieces between the green beans and potatoes. Drizzle with melted butter and 2 packages of Italian dressing mix. Cover with foil and bake for 1 hour.
