    No Bake Cornflake Cookies (Butterscotch)

    Butterscotch, peanut butter, mini chocolate chips, and cornflakes cereal. These 4-ingredient cornflake cookies are an easy no-bake treat!

    No Bake Cornflake Cookies

    Cornflake cookies have been around for decades, with many variations on the classic no-bake recipe. Many recipes call for a mixture of sugar, corn syrup, and peanut butter (just like scotcheroos). My version skips the sugar and corn syrup and uses a bag of butterscotch chips mixed with peanut butter for a smooth coating. The mixture hardens beautifully!

    I add mini chocolate chips to mine, both in the cookies and sprinkled on top (just like Avalanche cookies). The semisweet chocolate compliments the butterscotch perfectly. What I really love is that these cookies take just minutes to make, don't heat up the kitchen, and are made with one of my favorite flavor combinations: butterscotch and peanut butter.

    What Makes This Recipe Great

    Made with 4 ingredients: Yep, just 4 ingredients are all you need to make 2 dozen cornflake cookies.

    Cornflake cookies are a no-bake treat: These are great to make during the holidays when your oven is busy making other baked treats.

    They can be made in advance: Cornflake cookies will last up to 5 days in an airtight container making them the perfect cookie to make in advance. They can be stored at room temperature or chilled.

    Great flavor: If you like the flavor of Scotcheroos you'll love cornflake cookies. The combination of butterscotch, peanut butter, and chocolate can't be beat!

    No Bake Cornflake Cookie Ingredients

    Butterscotch Chips: you'll need a full bag of butterscotch chips.

    Peanut Butter: I prefer creamy peanut butter, but you can use crunchy peanut butter if you prefer.

    Cornflakes: I use 6 cups of cereal and think it makes the perfect cereal-to-coating ratio. For cookies with a slightly thicker coating of butterscotch and peanut butter, you can reduce to 5 cups of cereal.

    Mini Chocolate Chips: Optional, but I love the flavor that they add. They cut some of the sweetness of the butterscotch chips.

    How To Make Cornflake Cookies

    Step 1: Melt peanut butter and butterscotch chips in a microwave-safe bowl for 1 minute. Stir. Heat for an additional 15 seconds. Some of the butterscotch chips might not be completely melted and that's totally fine. Stir until everything is melted and smooth. It's always better to under-melt vs. overheat.

    Step 2: Add the cornflakes and stir with a rubber spatula. Make sure the cereal is completely coated with the peanut butter and butterscotch mixture.

    Step 3: Stir in ½ cup of the mini chocolate chips.

    Step 4: Scoop cookies using a medium cookie scoop (2 Tbsp) onto a parchment paper-lined baking sheet (or wax paper).

    Step 5: Sprinkle cookies with more mini chocolate chips, if desired.

    Step 6: Let cookies stand until hardened.

    Ingredients

    • 1 11 oz. bag butterscotch chips
    • 1 cup creamy peanut butter
    • 6 cups corn flakes cereal
    • ¾ cup mini chocolate chips divided

    Instructions

    • Heat butterscotch chips and peanut butter in a microwave-safe bowl for 1 minute. Stir. Heat for an additional 15 seconds. There might still be butterscotch chips that are not completely melted, but that's totally fine. Just stir until they finish melting and everything is smooth and creamy.
    • Fold in corn flakes cereal with a rubber spatula. Stir until completely coated.
    • Stir in ½ cup mini chocolate chips.
    • Use a medium cookie scoop (2 Tbsp.) to scoop the mixture onto a parchment paper-lined (or wax paper) baking sheet.
    • Sprinkle cookies with the remaining ¼ cup of mini chocolate chips.
      Let the cookies stand for 20 minutes to allow the butterscotch to harden. This process can be sped up by refrigerating the cookies until firm.
      Makes 24 cookies.

    Notes

    Store cookies in an airtight container for 5-7 days. Can be stored at room temperature or chilled in the refrigerator.
