Is there anything more comforting than a bowl of chili? I LOVE chicken chili because it’s filling, makes the best leftovers, and can be served over rice to make it go farther. It’s also healthy—not that that is a huge focus on my site. Homemade Hostess cupcakes anyone?
If you like cilantro as much as I do, don’t skimp on adding some to the serving bowls. Â So delicious and adds a ton of fresh flavor. I also like squeezing extra lime juice over mine!Â

Chicken Chili Ingredients

- 1 onion, chopped
- 1 poblano pepper, chopped
- 1 jalapeno pepper, chopped
- 1 Tbsp. garlic, minced
- 1 Tbsp. cumin
- 2 chicken breasts
- 3 cans cannellini beans, rinsed and drained
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1 Tbsp. lime juice
Toppings
- cilantro
- cheese
- tortilla strips (I like store bought, but you can make your own)
- extra lime wedges
Slow Cooker Directions
- Combine onion, poblano pepper, jalapeno pepper, garlic, cumin, beans, chicken and broth in a slow cooker.
- Cook on HIGH for 5 hours or low for 8 hours. Remove chicken and shred.
- Add chicken back into slow cooker and stir in sour cream, salt and lime juice.
- Serve with fresh chopped cilantro, shredded cheese, tortilla strips and extra lime wedges (optional).
This recipe serves 4-6 people (can easily be doubled) and makes the BEST leftovers. Serve over rice or chips to make it go farther.Â
