Valentine Brownie Truffles (+ Video)

Brownie truffles are so delicious and couldn’t be simpler. Brownies (made from a mix) and melting chocolate, that’s it! No cream cheese, frosting, or any other type of filler. Chocolate, fudgy and delicious.

Brownie Truffles

What are brownie truffles? I’ll tell you! Brownie truffles are made from mashed-up brownies. Yep, that’s it. There’s something magical that happens when you bake a pan of brownies, then break it all up with a fork and press it into different shapes. They no longer have the consistency of a brownie with crispy edges. They are fudgy, gooey, and loaded with chocolate flavor.

Brownie truffles are NOT like classic cake pops. Cake pops also start with a baked cake that’s been mashed up, but unlike most cake pop recipes, you do NOT need to add frosting or cream cheese to get a creamy center. The brownies are moist enough to stand on their own. And, side note, if you’d like to make cake pops without frosting, I have several recipes for that! It’s not the norm; most people add frosting, but you don’t need to.

How To Shape Brownie Truffles

You can add lollipop sticks for easy dipping, but I skipped sticks this time and made truffles instead of pops. And how cute are these heart-shaped brownie truffles?!? The easiest way to make brownie truffles is to roll the brownies into balls.

The second easiest way is to press small portions into silicone molds. I picked up two molds at Walmart, and they were the perfect size for these bite-sized treats.

I made a variety of heart and round truffles, covered in Valentine-colored melting chocolate and loaded with colorful sprinkles.

Valentine Brownie Truffles Ingredients

  • 1 box brownie mix (+ eggs, oil OR melted butter*, and water)
  • melting chocolate wafers or chocolate chips
  • sprinkles

*I’ve made these with oil and I’ve made them with melted butter. Melted butter is my preferred method, as they tend to be less greasy when dipping, but either way works. You’d just substitute the same amount of melted butter for oil.

How To Make Brownie Truffles

Step 1: Bake Brownies

Make a 9×13 pan of brownies according to the directions on the box. DO NOT overbake.

Allow brownies to cool completely in the pan.

Step 2: Shape In Molds

Use a fork to break up the brownies. You can trim off the edge pieces if you’d like, or just mash them into the mixture.

Press small portions into silicone molds or roll them into balls and place them on a parchment-lined baking sheet.

Step 3: Freeze

Freeze brownie shapes for 60-90 minutes.

Tip: if you are making shapes using silicone molds it can be quite time-consuming if you only have a couple of molds. I freeze mine for 30 minutes, then transfer the shapes to a baking sheet to freeze for another hour. That way I can get started on the next batch of heart shapes. Making a combination of shaped truffles and round truffles works great and takes less time than making them all shaped like hearts, etc.

Step 4: Dip in Chocolate

Heat melting chocolate in the microwave for 60 seconds (heat in 30-second increments). Stir until completely melted.

Pop the brownie truffles out of the molds. The brownie shapes will feel a little greasy, that’s normal.

Dip brownie truffles into melted chocolate and coat both sides. A fork works great to flip the truffle over in the chocolate. If making round truffles, I highly recommend using a dipping tool like this one. I love mine!

Tap the fork against the side of the bowl to allow some of the excess chocolate to drip off. You can also slide the fork across the edge of the bowl to remove excess chocolate.

Place dipped truffles on a parchment-lined sheet and immediately add sprinkles. The truffles will set up FAST since the centers are frozen.

The number of truffles that this recipe yields will depend on the size that you make them. I made 52 truffles. The hearts were 1″ wide and the round truffles were rolled into tiny 3/4″ balls. You can store the truffles on the counter, in the refrigerator, or in the freezer.

    Note: This is is you are heating an entire bag of melting chocolate. If making a variety of colors, and heating up smaller portions, heat for 15 seconds at a time and stir in between each interval.

  • Dip brownie truffles into melted chocolate and coat both sides. A fork works great to flip the truffle over in the chocolate. If making round truffles, I highly recommend using a dipping tool.

  • Place dipped truffles on a parchment-lined sheet (if the truffle doesn't slide off easily, use a second fork push it onto the sheet) and immediately add sprinkles. The truffles will set up FAST since the centers are frozen.
