The best part? It’s made in the microwave! No fussing over sugar temperatures, bringing to a boil, or baking. It is a recipe that we’ve made with our air popper, but have made with microwave popcorn too. Equally delicious.
Marshmallow Caramel Corn
Marshmallow Caramel Corn Ingredients
1/2 cup popcorn kernels (or 2 bags popped microwave popcorn)
1/2 c. butter
1/2 c. brown sugar
15 jumbo marshmallows
Directions
- Pop popcorn in air popper or microwave.
- Melt butter and sugar in a microwave safe bowl for 60 seconds. Stir.
- Add marshmallows and microwave in 30 second intervals for 90 seconds, stirring after each interval.
- Stir and pour over popcorn. Mix thoroughly.
Grab the entire bowl to share as a family, or divide into individual servings!
Marshmallow Caramel Corn

- popcorn popper
Ingredients
- 1/2 cup popcorn kernels or 2 bags of microwave popcorn
- 1/2 cup butter
- 1/2 cup brown sugar
- 15 marshmallows (regular) or 2 1/2 cups mini marshmallows
Instructions
- Pop popcorn. Make sure you use a large bowl.
- Melt butter and brown sugar together in a microwave safe bowl for 1 minute. Stir.
- Add marshmallows and microwave in 30 seconds intervals (stirring in between) until melted and smooth (about 90 seconds).
- Pour marshmallow caramel over popcorn and stir to coat evenly.
- You can dig right in if you want the warm ooey-gooey popcorn, or wait about 10 minutes for it to slightly set up. This won't ever set up like baked caramel corn, it will always have a soft, chewy texture.
