Classic Potato Salad
My classic potato salad recipe is based off of the potato salad that my mom made when I was a child. I always loved it and loved how simple it was. I brought it to a potluck when I was a newlywed and one of my friends said, “Is that white trash potato salad?!?” I wasn’t sure how to respond or whether or not I should be offended, haha! She explained that her husband loved potato salad, but only the kind made with mayonnaise, mustard and relish for the dressing. Well, that’s exactly how I made my potato salad so I fessed up that I did, indeed, bring white trash potato salad. He had 3 servings that night! I prefer calling my potato salad “classic” instead of “white trash”, but you can call it whatever you’d like.
Classic Potato Salad Ingredients
The ingredients are BASIC. Ones that everyone has in their refrigerator already. If you’d like to add dill (fresh or dried) feel free to do so! I use whatever I have on hand. Sometimes I’ll sprinkle the salad with a bit of paprika for color, but it’s totally optional. And celery—-everyone adds celery, but I don’t care for it so I always leave it out. I won’t judge you if you add a handful to your salad, but the main things you’ll need are as follows:
- 2 1/2 pounds of russet or Yukon gold potatoes (5-6 potatoes peeled and cubed)
- 1 1/2 cups mayonnaise
- 1 teaspoon yellow mustard
- 1 Tbsp. sweet pickle relish
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 hard boiled eggs
- 1/2 onion, diced
- dill (fresh or dried)
You can add as much dill as you’d like, just remember that you don’t need as much dried dill as fresh. A little goes a long way.
How To Make White Trash (Classic, ha!) Potato Salad
Peel potatoes and cut into cubes. Place in large pot and bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are fork tender. Drain and cool slightly.
Place cooled potatoes into a large bowl. Add diced hard boiled eggs and onion. Stir.
Combine mayonnaise, mustard, relish, salt and pepper in a small bowl. Pour over potatoes, onions and eggs. Sprinkle with a couple of tablespoon or two of fresh dill or about 1/2 a teaspoon of dried dill.

- 2 1/2 pounds of potatoes 5-6 potatoes peeled, cubed
- 6 hard boiled eggs
- 1/2 onion diced
Potato Salad Dressing
- 1 1/2 cups mayonnaise
- 1 teaspoon yellow mustard
- 1 Tbsp. sweet relish
- 1 teaspoon salt
- 1/2 teaspoon pepper
Garnish
- dill fresh or dried
Instructions
- Cover potatoes with water in large saucepan; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.
- Place cooled potatoes into a large bowl. Add diced hard boiled eggs and onion. Stir.
- Combine mayonnaise, mustard, relish, salt and pepper in a small bowl. Pour over potatoes, onions and eggs. Sprinkle with a couple of tablespoon or two of fresh dill or 1/2 a teaspoon of dried dill.
