These gingerbread cookie boxes are so fun to make (and easy, too!). We make them with homemade gingerbread cookie dough (this one is our favorite---so easy to work with and delicious), but you can TOTALLY make them with a store bought cookie mix! Our favorite store bought cookie mix is the Betty Crocker gingerbread cookie mix that comes in a pouch.Gingerbread Cookie Box Supplies
- 1 batch of gingerbread cookie dough
- royal icing (a bottle of cookie icing works too)
- candies
- nesting cookie cutters: Any two cookie cutters that are the same shape would work. One needs to be bigger than the other)
Gingerbread Cookie Box Instructions
(scroll to the end for step by step photo instructions!) Step 1: Bake cookies. For each box you'll need two solid circles and two rings. Bake the cookies and let them cook completely. Step 2: Place a solid cookie on your work surface and add a ring of icing. Step 3: Lay one of the ring cookies on top, add more icing, and the the next ring cookie. Step 4: Let the cookie boxes sit until the icing has had a chance to harden. Step 5: Fill with M&Ms and add the lid (no icing necessary for the lid)!
We made four of these and used the extra cookie dough that was inside of the cookie rings to snack on. The nice thing about gingerbread is that it doesn't go stale quickly. These boxes will last up to 5 days and still taste great. Far longer than sugar cookies!

Ingredients

- ¾ cup powdered sugar
- 2-3 teaspoons water
- M&M candies
Instructions
- Bake cookies.For each box you’ll need two solid circles and two rings. Bake the cookies and let them cook completely.
- Place a solid cookie on your work surface and add a ring of icing.
- Lay one of the ring cookies on top, add more icing, and the the next ring cookie.
- Let the cookie boxes sit until the icing has had a chance to harden. Fill with candy.
- Add a ribbon of you'd like!
Notes
If you use our homemade gingerbread cookie recipe, you will end up with 3-4 cookie boxes.
