    Peanut Butter Sandwich Cookies

    My oldest loves peanut butter. It's basically the glue that holds his 6'3" body together. These cookies were 100% made for my peanut butter lovin' guy. Peanut shaped peanut butter cookies with a peanut butter filling. So delicious and so easy to make. The filling is more of a peanut butter consistency vs. a frosting consistency like most cookie sandwiches.

    Peanut Butter Cookie Sandwiches Recipe

    Ingredients

    • ½ cup sugar
    • ½ cup brown sugar
    • ½ cup peanut butter
    • ½ cup butter, softened
    • 1 egg
    • 1 ¾ cup flour
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    Frosting
    • 1 cup creamy peanut butter
    • 1 Tbsp. honey
    • ⅓ cup powdered sugar
    Mix sugars with peanut butter, butter and egg until smooth and creamy. Add flour, baking soda, baking powder and salt. Mix thoroughly. Scoop cookie dough onto an uncreased baking sheet using a medium cookie scoop. peanut butter cookie ball cut in half Cut each cookie dough ball in half.     Why the criss cross marking on peanut butter cookies?

    According to the Betty Crocker website, "The hash mark may be one of the most prevalent symbols in modern life, but it’s been the “mark” of peanut butter cookies for more than eighty years, and for good reason. Pressing a hash mark into each cookie ensures this dense dough will flatten out and bake evenly."

    Cookie Dough
