Peanut Butter Sandwich Cookies
My oldest loves peanut butter. It’s basically the glue that holds his 6’3″ body together. These cookies were 100% made for my peanut butter lovin’ guy. Peanut shaped peanut butter cookies with a peanut butter filling. So delicious and so easy to make. Let’s get started.
One recipe makes 24 cookies which will yield 12 peanut butter cookie sandwiches. The filling is more of a peanut butter consistency vs. a frosting consistency like most cookie sandwiches.
Peanut Butter Cookie Sandwiches Recipe
Ingredients

Cookies
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup peanut butter
- 1/2 cup butter, softened
- 1 egg
- 1 3/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Frosting
- 1 cup creamy peanut butter
- 1 Tbsp. honey
- 1/3 cup powdered sugar
Mix sugars with peanut butter, butter and egg until smooth and creamy. Add flour, baking soda, baking powder and salt. Mix thoroughly.
Scoop cookie dough onto an uncreased baking sheet using a medium cookie scoop.
Cut each cookie dough ball in half. Roll each half into a small ball.
Place two cookie dough balls together then press down with your fingers to flatten into a peanut shape.
Make criss cross patterns on each cookie using a fork.
Bake at 375 degrees for 8-9 minutes (edges should be slightly golden). Let cookies cool completely.
Mix peanut butter, honey and powdered sugar together. Spoon into a plastic baggie and cut off the corner of the bag. Pipe onto cookies then add a second cookie to create a sandwich.
Why the criss cross marking on peanut butter cookies?
According to the Betty Crocker website, “The hash mark may be one of the most prevalent symbols in modern life, but it’s been the “mark” of peanut butter cookies for more than eighty years, and for good reason. Pressing a hash mark into each cookie ensures this dense dough will flatten out and bake evenly.”
