Oven Fajitas Are An Easy Dinner The Family Will Love

Oven fajitas made with seasoned chicken, bell peppers, onions, and sliced chicken all baked together on a sheet pan for the perfect blend of flavors. Oven fajitas are a great weeknight meal. This easy weeknight recipe is my kind of comfort food. I love fresh Mex and all of the flavors and warmth that come with it. We’ve been swamped lately with marching band practice, piano lesson and Boy Scout activities. Our evenings are definitely not our own so easy weeknight dinner recipes like this are golden over here!

Slow cooker Green Chili Shredded Pork for Tacos or Salad: my favorite pork to use on pork salads or inside tacos.

My oven fajitas come together in a little over 30 minutes, are made with fresh produce, antibiotic-free chicken, and really hit the spot! For a vegetarian version, simply leave out the chicken and add more peppers and onions.

The icing on the cake is that they bake up using one pan. Don’t you love one-pan dinners? Less dishes for those busy nights. Be sure to make a batch of homemade guacamole to go with these oven fajitas!

Oven Fajitas (Chicken or Vegetable)

Ingredients:

1 lb. Foster Farms Simply Raised Chicken Breast Fillets

4 bell peppers

1 medium yellow onion

2 T. fajita seasoning (homemade or store bought)

3 T. olive oil

flour tortillas

sliced bell peppers on cutting board
Slice peppers and onions thinly. You can use any variety of bell peppers you’d like, but I like my fajitas colorful so I bought a variety pack with orange, green, yellow, and red.

Arrange on a baking sheet.

Slice chicken into thin strips.

Arrange chicken on top of peppers and sprinkle 2 T. of fajita seasoning over entire tray.

Drizzle olive oil over chicken, peppers, and onions, and use tongs to give everything a nice toss before baking.

Bake at 425 degrees for 30 minutes, stirring once mid way through the cooking process.

Today we made our favorite green smoothie. It’s all about balance—-just kidding. We all know that’s a lie. I have like 10 healthy recipes on my site and 800 breads and desserts. 😂

Tip: when buying produce, buy extra to freeze. I buy an extra pineapple, an extra package of grapes, an extra bunch of bananas and an extra bag of spinach and freeze them for smoothies. I slice everything up and freeze it on baking sheets then bag it up. It makes it easy to grab a handful to toss into a blender. You can freeze entire bags of spinach too and add a handful to smoothies. I always blend my spinach and water first then add the rest of the fruit. No little spinach chunks in the smoothie that way. 🙌🏻

Tomorrow is all about gingerbread cookies for Sant Tomorrow is all about gingerbread cookies for Santa (although the Santa who comes to our house prefers sugar cookies. He can share these with Mrs. Claus). Ruby has them all picked out—-gingerbread boys, gingerbread girls, and ninja-bread cookies. Should be fun. Had to go out and get more molasses and it wasn’t easy to find! Everyone else must be making gingerbread, too!
