    White Chocolate Raspberry Scones Recipe

    White chocolate raspberry scones that are light and melt in your mouth buttery. Perfect for a Sweetheart's breakfast on Valentine's Day!

    I'm a sucker when it comes to pretty holiday foods. I actively seek out opportunities to pull out my seasonal cookie cutters and make sandwiches, tortillas, and cookies even more festive. It's a sickness, I tell you!

    My scone recipe was the latest victim but just look at those pretty white chocolate raspberry scones. Perfect for a Valentine's Day breakfast. I even added a handful of white chocolate chips to make them even more decadent this time around. Scones are one of those recipes that appears to be fancy or complicated but is actually incredibly simple. Simple is best!

    White Chocolate Raspberry Scones

    • 2 ¼ cup flour
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ¼ cup sugar
    • ½ teaspoon baking soda
    • ½ cup COLD butter
    • 1 cup raspberries
    • 1 egg
    • ¾ cup milk
    • 1 Tbsp. lemon juice
    • ½ cup white chocolate chips
    • 2 Tbsp. butter, melted

    Combine flour, sugar, baking powder, salt and baking soda in a large bowl.  Set aside.

    TIP: The key to perfect scones is all in the butter. Grate your COLD butter with a cheese grater and add it to your flour mixture.

    Mash butter with pastry cutter or fork until it resembles coarse crumbs.

    Beat egg, milk, and lemon juice with a fork in a small bowl. Stir into flour/raspberry mixture.

    White chocolate raspberry scones that are light and melt in your mouth buttery. Perfect for a Sweetheart's breakfast on Valentine's Day!
    Gently turn out dough on a generously floured surface and roll into a 12″ round disc with a rolling pin. You don’t need to knead or work the dough. The less you handle the dough, the better. It will be a sticky dough, just flour your hands and work your dough without handling too much.

    Cut with cookie cutter. Repeat with remaining dough scraps, working gently to press dough together before cutting again with cookie cutter.

    Bake at 400 degrees for 20 minutes on parchment lined baking sheet.

    Brush with melted butter.

    Serve with a glass of ice cold milk or sparkling apple-cranberry juice for the perfect Valentine's Day breakfast.

    Do you have to use cold butter in scones?

    The best pastries come from cold or frozen butter. You can either cut it into tiny cubes and use a pastry cutter or grate frozen butter (my favorite method).

    Can you substitute another berry for raspberries in this scones recipe?

    Ingredients

    • 2 ¼ cup all purpose flour

      My 99cent store had the 48oz containers of smart and final brand cottage cheese last summer! Generally when products are not 99 cents, they sign them as such - so I confirmed and they were 99 cents! I bought all 5! LOL I was a little cottage cheesed out after a while; but I couldn't pass them up - they dates were still good for about 6 weeks and that size is usually about $5; and I got 5 for $5!! 🙂
