    Slow Cooker Green Chile Shredded Pork for Salads or Tacos

    This slow cooker green chile shredded pork is perfect for tacos, enchiladas, chimichangas or salad! Slow cooked in your crock pot, it's an easy drop and go recipe.

    I'm a huge salad fan and love all different kinds. My favorite is pork salad. I layer rice, beans, shredded pork, salsa, and a big handful of greens, and salad mixing. A delicious, and healthy lunch, and a great way to use up leftover green child shredded pork from the night before!

    I took a semi-homemade approach with my pork salad and used an Eat Smart Gourmet Vegetable Salad Kit to prepare my salad! The Eat Smart Southwest Salad Kit includes 5 superfoods; savoy cabbage, red cabbage, radishes, carrots and kale plus toppings and a chipotle dressing! If you don't have a salad kit, no worries. A giant head of romaine lettuce works great too. Just chop it finely, add your favorite veggies like cherry tomatoes or shredded carrots, and you're on your way! If you don't have Southwest dressing on hand, mix salsa and ranch together. Done and done! Another dressing that I LOVE for shredded pork salad is this jalapeño cilantro ranch from Modern Honey.

    Slow Cooker Green Chile Shredded Pork salad

    Serves 6-8

    • 1  Southwest Salad Kit or a large head of romaine lettuce
    • 1 can. black beans, drained and rinsed
    • salsa, to taste
    • 1 batch of green chile shredded pork (see recipe above)

    Rice:

    • 3 c. cooked rice
    • 1 T. lime juice
    • ½ c. cilantro

    To serve add ½ c rice to a bowl. Add ¼ c. black beans, then 4 oz. shredded pork.

    Top with a handful of greens. Drizzle with the chipotle dressing and add remaining toppings.

    Ingredients

    • 2   lb. pork roast
    • 1 small can of green chiles mild
    • ½ cup green salsa
    • 1 cup chicken broth.

    Instructions

    • Cook on low for 8-10 hours. Shred.

    Notes

    Instant Pot Version: Pressure cook on high for 30 minutes. Allow to sit after cooking for 10 minutes then quick release.
